Greek Chickpea Salad
Fresh, vibrant and full of Mediterranean flavour. This chickpea salad is a quick and colourful side that pairs perfectly with grilled meats, seafood and summer BBQ dishes.
Serves: 4
For the salad
- 1 × 400g can chickpeas, rinsed and drained
- 1 cucumber, sliced and quartered
- 300g cherry tomatoes, halved
- 1 small red onion, finely sliced
- 170g feta cheese, crumbled
- 15g fresh dill, finely chopped
For the dressing

- 80ml extra virgin olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- 1 tsp salt
- 1 tsp ground black pepper
- ½ tsp chilli flakes (optional)
Method
Follow these simple steps to create a fresh and flavourful salad that works perfectly alongside BBQ dishes.
1. Prepare the salad ingredients
In a large bowl, combine the chickpeas, cucumber, cherry tomatoes, red onion, half of the feta cheese and the chopped dill.
2. Make the dressing
In a small jug, whisk together the olive oil, red wine vinegar, oregano, salt, black pepper and optional chilli flakes.
3. Combine the salad
Drizzle the dressing over the salad and toss gently to coat everything evenly.
4. Finish and serve
Top with the remaining feta cheese, adjust the seasoning if needed and serve.

Fresh dill has a light, aromatic flavour that works beautifully with salads, yoghurt dressings and summer dishes.
It grows well outdoors in sunny spots and is easy to harvest regularly before flowering to keep the flavour fresh.
